Apricot Overnight Oats

Ingredients

  • 1/2 cup rolled oats
  • 1/2 cup apricot yogurt
  • 1/2 cup milk (any kind you prefer, such as cow’s, almond, or oat milk)
    1 tablespoon chia seeds
  • 1 tablespoon honey or maple syrup (optional, for additional sweetness)
  • 1/4 teaspoon vanilla extract (optional, for enhanced flavor)

 

For the toppings:

  • Diced fresh apricots (or dried apricots if out of season).
  • Sliced almonds or chopped nuts.
  • Additional dollop of apricot yogurt.
  • Add a sprinkle of cinnamon or nutmeg.

Instructions:

  1. Mix the Ingredients
    In a mason jar or any airtight container, combine the rolled oats, apricot yogurt, milk, chia seeds, and honey or maple syrup if using. Add the vanilla extract for a bit of extra flavor. Stir well to ensure everything is evenly mixed.
  2. Refrigerate Overnight
    Seal the container and place it in the refrigerator overnight, or for at least 6 hours. This allows the oats to absorb the liquids and flavors, becoming soft and creamy.
  3. Add Toppings and Serve
    Top the oats with diced fresh or dried apricots for a sweet, tangy flavor. Add sliced almonds or your choice of nuts for crunch. Optionally, add a dollop of apricot yogurt on top for extra creaminess and flavor. Sprinkle a bit of cinnamon or nutmeg for a warm, spicy note.
  4. Enjoy
    Your Apricot Yogurt Overnight Oats are ready to be enjoyed. This can be eaten straight from the fridge or at room temperature, depending on your preference.
